Kushari - Egyptian Comfort Food


Also known as koshary, kosheri or koshari, kushari is a simple dish of rice, brown lentils, chickpeas and pasta topped with a tangy tomato sauce and caramelized onions, served with a garlic vinegar sauce on the side. It is considered the national dish of Egypt, and is found throughout the country in nearly every home and in thousands of restaurants and food stalls. While it has evolved into a dish which is distinctly Egyptian, its origins most likely come from the older Indian dish, Kitchiri (meaning a dish with rice and lentils) which very likely arrived in Egypt during the late 19th century, during British occupation. It is entirely vegan and, because of this, is a popular lenten dish with Coptic Christians.
