Farmers Market Class (up to 10 people) (available V, Veg, GF) *

Price: $125/person (includes lunch with wine, beer or soft drink)

Saturday morning trip to the farmer’s market to choose produce, then back to Carmo for a class and joint lunch. This class focuses on the best techniques for ensuring you get the most out of fresh ingredients, no matter where they come from. 

Tropical Foodways (up to 15 people)* (available V, Veg, GF)

Price: $125/person (includes lunch with wine, beer or soft drink)

This class is a journey into the rich foodways of the tropics, including a brief history of the dissemination of the primary fruit, vegetables and spices that make up what could be considered a tropical “canon” of foods which dominate the world’s plate. From the “sofrito” to “masala,” we’ll be cooking and tasting our way along a well-trodden path of flavors and time-tested cooking techniques, as well as little-known and overlooked methods which will help you get the most out of fresh ingredients, ultimately adding authenticity and improving the flavor and nutritional value of your home-cooked meals. The class will culminate in a group lunch served family-style with the beverage of your choice.

 

Ceviche (up to 15 people)*

With rich a history dating back over 2,000 years, the dish has become a staple in the tropics, and is now conquering the world. This class will cover fish selection, handling and preparation, an introduction to ceviche’s history and foodways, as well as the best methods and techniques for preparing traditional varieties, including Peruvian, Panamanian, Cuban, Vietnamese and others. 

 

Sushi - Class 1 (up to 6 people)
Price: $135/person (includes lunch with sake, wine, beer or soft drink)

Learn the basics of making authentic sushi, including techniques that you can take home and apply the next day. Fish selection, handling and preparation will also be covered. Class taught by Chef, Wataru Saeki of Chiba Prefecture, Japan.

Sushi & Sashimi - Class 2 (up to 6 people)

Price: $150/person (includes lunch with sake, wine, beer or soft drink)

Building on the basic techniques of the first class, you’ll get into more detailed preparations of sushi and sashimi, be exposed to a wider variety of ingredients, as well as traditional methods of sauce preparation. Fish selection, handling and preparation will continued to be expanded upon. Class taught by Chef, Wataru Saeki of Chiba Prefecture, Japan.

A Deeper Look at New Orleans Cuisine (Private or small-group only) 

Price: Varies

Spend a half or full day learning about the multi-cultural, sometimes tropical, always rich history and culture of New Orleans and Southeast Louisiana cuisine. This session will be customized based on attendee’s interests and preferences, but will include activities such as meeting regional fishers, farmers and other food producers, visiting historically and culturally significant sites, dining at iconic eateries and meeting the figures which make such places what they are.  Prices vary depending on activities programmed.
